FABULOUS FRUIT KA-BOBS

Here's a fresh and tasty recipe that celebrates the tastes of summer.

Summertime means lots of delicious fruit, which are so much better for you than candy, cookies and soda. Summer fruits include honeydew, cantaloupe, watermelon, mango, plums, nectarines, grapes and peaches.

These fruits are not only delicious, but they contain necessary nutrients and fiber. Fruit is versatile. You can just eat it as is, in natureıs perfect little package. You can also enjoy it as juice, or you can cook it. You can put anything on the grill these days, even fruit. Grilled fruit is popular during the summer months, as it adds a delicious, sweet kick to other foods.

Summer is the time for us to lighten up everything from our clothing to our diet. Today, Chef Justin offers up a tasty meal thatıs light, healthy and delicious. Try it with an adultıs help.

Trudyıs Tropical Fruit Ka-Bobs

Ingredients

2 apricots

1 banana

1 mango

2 kiwis

1 pineapple

3/4 cup raspberry or strawberry jam

8 oz (1 container) yogurt in same flavor as jam

1/2 lb. jumbo shrimp, peeled, cleaned and pre-cooked

1 cabbage or banana leaf

Method

Heat electric or gas grill to 240-260 degrees. Place fruit and shrimp on four skewers in any order you choose, and place on heated grill.

Turn occasionally, making sure fruit and shrimp are cooking.

Shrimp and fruit will change color. Usually one side of will be ready after just a few moments.

Once skewers are removed from grill, brush with jam, and serve with side of yogurt for dipping sauce. Place skewers on a serving plate over cabbage or banana leaf. Serves 4.

Food Groups: Apricots, banana, mango, kiwi and pineapple are in fruit group. Shrimp is in fish group.

Justinıs Tip

If any of the skins of the fruits seem hard or tough, peel them before slicing. For an extra flavor in the dipping sauce, place a tablespoon of the jam in the yogurt, stir, and serve.
